We are spending the weekend with my husband’s family this week for a wedding. Hooray for a shorter week of menu planning. I learned from our last trip away and actually made a menu plan in advance for when we return. No scrambling for supper at the last minute with there is laundry to do and a house to clean.
Breakfasts:
- Muffins (from freezer)
- Smoothies/popsicles (from freezer)
Lunches:
- Salads
- Leftovers
- Bean Burritos
Suppers:
- Quinoa Chicken Chili (another recipe from this list of quinoa recipes)
- Taco Salad
- Sausage Pasta Bake
- Salad
- Leftovers or scrambled eggs
Snacks:
- Fruit
- Pretzels
Goals:
- Run 3 times
- Concert Series Meeting
- Read 30 minutes a day
- Plan each night for next day
