Menu Plan and Goals

Once again, it’s Monday. I wish I could drag out the weekend just a touch. Yesterday was our first small group since May. We had it at our house and kept it simple with pancakes and waffles. The nice thing about hosting is the extra motivation to get things picked up around the house. 🙂 It was a fun evening for a few nice families from church.

The need to declutter has been coming on strong. The plan is to keep on chipping away at it. First up was our bedroom. A bit more to do, especially in the closet, but sizable progress was made. This next week appears to be fairly uneventful so I’m hoping to tackle another project or two.

On the baby front, we now have 4 teeth. Two on the top and two on the bottom. He’s pretty cute, but is still working on his two other bottom teeth. Ugh. I wish they’d hurry up and come it so he’ll sleep longer than a 2 1/2 hour stretch. Soon. (I hope.) It’s crazy waking up in the morning feeling more tired than you did going to bed.

Starting back eating big salads for lunch last week was fabulous. I’ve missed it, even though sweet potatoes were pretty tasty too. Something about lots of fresh veggies that makes me happy.

Menu:

Suppers:

  • Crockpot pinto bean and chicken tostadas
  • Small Groups at our house (I’m making pancakes and waffles)
  • Homemade pizza
  • Leftovers: tostadas, skillet lasagna, pizza

Lunches:

  • Salads
  • Skillet Lasagna (recipe coming in a few weeks)
  • Leftovers

Breakfasts:

  • Leftover pancakes and waffles
  • Sweet potato hashbrowns

Snacks:

  • Fruit
  • Don’t have this planned well. We’ll figure something out though, my daughter loves her snacks (and actually if I don’t eat between meals I end up starving too)

Goals (affiliate links used):

  • Read the last 4 chapters in Primal, 8 chapters in Pride and Prejudice, and start a new book.
  • Type up the last layer dip recipe (didn’t happen last week) and 1 more recipe
  • Finish Christmas thank you cards
  • Continue memory verse with my daughter and make verse cards
  • Go through clothes in our closet

This week could have been titled catch up week! Everything is officially washed and put away from vacation, Christmas decorations are down, the tree has been recycled, and the cars are vacuumed. Now we are settling back into a routine. The baby has had his fair share of cranky days the past week but I’m hoping that since tooth number 3 has broken through we’ll have some happier moments. Until the next 3 decide to come in anyway. The weather was gorgeous Sunday. A trip to the park made my daughter’s weekend.

Other than one meeting, this week should be uneventful. (Here’s hoping that nothing unplanned pops up. A quiet week sounds good to me.) I’m hoping to be able to tackle some projects! (Decluttering is high on the list. It seems like stuff always piles up. Please tell me I’m not the only one that happens to?)

Suppers:

  • Broccoli Cheese Soup x 3
  • Mexican Soup x 2
  • Homemade Baked Egg Rolls (didn’t have these last week)
  • Homemade Frozen Pizza (this is an experiment, never tried making them before!)

Lunches:

  • Salad
  • Mexican Soup
  • Egg Rolls

Breakfasts:

  • Eggs
  • Sweet Potato Hash Browns

Snacks:

  • Fruit: Pomegranates, oranges, pineapple
  • Cucumber and Carrots with hummus

Such an amazing past 10 days. We drove to my parents’ home and spent time with them and my siblings. We started the trip with two sick kids but they were back to full strength for the last 3 days. I must say, it was nice to have lots of extra hands to entertain the kids and not be the one in charge of cooking and cleaning. 🙂 It’s also amazing how productive brainstorming can be when ones mom is involved –  the 5 Layer Dip Recipes are one of the results.

My daughter was excited to experience a movie theater for her first time, sleep in a fort made of blankets on the game room floor with one of her aunts, and run around like a maniac with her dog cousin Denalli. (They had a little too much fun together – they played like two human kids. She wasn’t intimidated at all. It was so cute!)

One of my sisters, Alison, works at a salon and gave our daughter a (needed) first hair trim. We started calling it that after the not quite 3 year old asked “if it hurt” when we were on the way to get our hair done.

After trips like this, I always wish we lived closer. The time is always too short and too far between.

Suppers:

  • Baked Egg Rolls (bought the ingredients for Christmas and ended up having plans come up)
  • Pasta Bar (at my parents’)
  • Fried Rice (at my parents’)
  • Grilled Cheese
  • Ladies’ Bible Study
  • Homemade Pizza

Lunches:

  • Leftovers
  • Sweet Potatoes (white for my husband)

Breakfasts:

  • Pancakes
  • Granola

Goals:

  • End of year giving records for out local concert series association (didn’t happen last week)
  • Read 4 chapters of 2 different books
  • Put the Christmas decorations up
  • Clean up post vacation mess
  • Research for a project

Menu Plan and Goals at From this Kitchen Table

I hope that you all had a wonderful Christmas. Our Christmas Eve was spent at home and church followed by dinner at home. Our daughter was exhausted and was not only in bed but also asleep by 7:19! It was fun experiencing Christmas morning with our daughter who didn’t remember anything from last year. She had a blast opening her presents and handing out the ones she picked out for us and her brother. The day was finished with a game night at a friend’s house. I wish I came in victorious, but nope. At least we gave the winner a slight run.

This week started with a little rocky start. Both kids have been under the weather and just got over a fever and still have a  bit of a cough. But the week is a fun one anyway. We are off of work and get to spend time with family. I’m going to thoroughly enjoy a small break from cooking.

  • Potato Sausage Soup

  • Roast
  • Homemade Pizza

My goals this week are simple:

  • Blog brainstorming
  • Write 4 posts
  • Makes goals for the next year
  • Have fun!!!

Menu Plan and Goals

I’m excited! Coming up on the blog the month of December is going to be all things Christmas. You can expect posts with ideas for gifts, holiday recipes, and thoughts on Christmas and the season. What I’m looking forward to the most is having some of my family guest post! I’m excited to introduce them to you and share their thoughts and recipes.

Since Thanksgiving is this week, I’m cutting back on posting. I know I’m not going to be spending time reading and browsing the internet – I’m going to be enjoying my family! So, instead of writing posts that nobody is going to have time to read, I’ve decided to take focus on December.

This week is a short one. When it comes to menu planning the name of the game is to use up what’s in the fridge and hopefully avoid grocery shopping. Here’s our (non exciting) menu before we head into Thanksgiving activities:

Breakfasts:

  • Chicken Gravy over Potatoes
  • Leftovers
  • Salad
  • Baked Sweet Potatoes

Suppers:

  • Creamy Potato Soup (with veggies added in – carrots, celery, and zucchini)
