Menu Plan and Goals

We took a day trip Saturday to spend time with my husband’s parents and brother, sister-in-law, and nephew. Most of the day was spend at a science & discovery center (our daughter still wasn’t ready to leave after hours there) followed by an hour at a park and dinner.

Being gone on a Saturday certainly cuts into the ability to accomplish projects, but we tackled as much on Sunday as possible and I’m very much looking forward to spending next weekend at home!

Supper:

  • Spicy Indian Chicken Sandwiches (recipe coming)
  • Bean and Rice Burritos
  • Leftovers
  •  Quinoa crust pizza (forgot to soak the quinoa, so we didn’t have it last week)
  • Out of town

Lunches:

  • Butter Chicken and naan (recipes coming – one of our favorites!)
  • Picnic
  • Salads (My husband and me)
  • Leftovers (for my daughter)

Breakfasts:

Goals:

  • Keep plugging away in  Mansfield Park and start another book from this list.
  • Price supplies for room sprays
  • Contact the Herb Festival
  • 3 Scripture cards
  • Write 4 posts
  • Exercise. Plan to at least do the video from the 28 days of Pilates every day. Started last week and each day is only 5-9 minutes, so it’s hard to come up with an excuse not to get it done.

Menu Plan and Goals

One big development has occurred this week. The little guy has officially started crawling on all fours. No more getting around by inching forward and rolling. Once he tackled that skill, he was on to attempting to pull himself up. Last night, for the first time, he made it past his knees and used the couch to pull up to standing. He was pretty proud of himself. He also had 2 teeth come through (in the same day)! I’m waiting for tooth number 8 to come in, before I let myself get too excited.

The Valentine’s treasure hunt using picture clues was a hit! It took our daughter the first two clues to really understand what was going on and after that she took off running. She wanted it to keep on going. I suppose that might have had something to do with the little goodies she kept finding.

After a whirlwind weekend, I’m looking forward to a (hopefully) quieter week.

Suppers:

  • Fettuccine with Alfredo Sauce, broccoli, and bread sticks (recipes coming the next two Fridays!)
  • Small Groups (soup theme). I brought mexican soup and rolls
  • Pizza with a quinoa crust (new recipe)
  • Leftovers x 4

Lunches:

  • Salads (weekday lunches for Shaun and me)
  • Leftover pizza (weekday lunches for our daughter)
  • Grilled cheese (weekday lunch for our daughter)
  • Breakfast Quesadillas on corn tortillas
  • Guacamole and fruit

Breakfasts:

  • Pancakes
  • Oatmeal
  • Lemon Muffins

Goals (affiliate links used):

  • Stuff brochures in envelopes (already labelled and stamped) for mail for the membership drive for our concert series association.
  • Read. Minimal reading happened last week, so I really be happy for anything. I’d love to finish From Playpen to Podium, read more of Mansfield Park, and start another from my list.
  • Finish 4×6 scripture cards (again, didn’t happen last week)
  • Write recipe contributor post
  • Write/Schedule 3 posts for next week
  • Budget meeting
  • Send e-mails for research (noticing a trend, that didn’t happen last week either)
  • Play with the room spray scents
  • Exercise (maybe, hopefully. . .)

Sometimes the to-do list is so long that no matter how much I get accomplished it feels like nothing got done. Even though I felt that way about this past week, looking back a lot of stuff actually happened.

The cold is sticking around the beginning of the week but Thursday we might hit 50! Hooray!

We celebrated a certain little girl’s third birthday this week. We kept things pretty simple but I think she had fun and felt special. For some reason she loves Davey and Goliath.

On the menu this week, we have quite a few new recipes. It’s always fun actually make things from e-mails or Pinterest boards.

  • Leftover Scrambled Egg Enchiladas
  • Oatmeal
  • Muffins

Snacks:

  • Guacamole
  • Cucumber with Black Bean Hummus

Goals:

Bombed on some of the goals last week, but that’s alright. Maybe this will be the week tooth number 6 comes in and a good night sleep will happen.

  • Finish From Playpen to Podium, read more of Mansfield Park, and maybe start another from my list. (I just noticed I forgot to list Mansfield Park with the Austen novels. Oops)
  • Finish Scripture Pictures
  • Exercise (one of the things that didn’t happen at all last week)
  • Submit one guest post
  • Send e-mails for research
  • Work on scent formulas
  • Celebrate Valentine’s Day

Menu Plan and Goals

Brrr. It’s cold and getting colder. My poor plants have spent most of their days inside and I think they miss the sun. I do too. A bit of snow my accumulate this week, but we’ll see.

We got my husband’s old tent down from the attic and set it up on my daughter’s bed. Yep, it’s ALF. She’s loving sleeping in it and thinks she’s pretty cool.

This week we are celebrating our daughter’s birthday. She turns 3. Her request for her birthday meal – sweet potatoes and peas. When I asked her what else, she said broccoli and carrots. Hmmm. She wanted typical desserts though – we are making chocolate chip ice cream and number 3 cookies. She has been counting down. There are 2 sleeps to go.

Suppers:

  • Quinoa Black Bean Enchilada Bake (with this enchilada sauce recipe)
  • Super Bowl Small Group – Bringing homemade salsa and Italian Layer Dip
  • Hamburger Noodle Casserole (Divided it into two pans so we’d have one to give. Recipe coming the end of the month)
  • Mac and Cheese, steamed broccoli, carrot sticks, cookies and ice cream
  • Leftovers
  • Oatmeal Crust Pizza (new recipe)

Lunches:

  • Fajitas with homemade tortillas
  • Leftovers
  • Salad

Breakfasts:

  • Scottish Oats
  • Pancakes
  • Muffins

Goals:

  • Read 8 chapters of Mansfield Park, From Playpen to Podium, finish Maximized Living Nutrition Plans
  • Write 3 posts and design 2 graphics
  • Spend 15 minutes a day x 5 days on memory cards
  • Do experiments for a project
  • Exercise 3 times (surely I can do that)
  • Get birthday stuff ready

Menu Plan and Goals

Beautiful weather returned for a few days this weekend. We spent part of the (Sunday) afternoon playing in the backyard pretending to be flying. Oh to have the imagination of a 3 year old. After both kids were covered in dead grass they headed to the bath. Only a few hours later some friends called wanting to know if we could meet at the park. Might as well take full advantage of the gorgeous day. Now both kids are in bed and as I sit and type this I can hear the wind howling outside. I think the arctic air is on its way back.  At least in this part of the country the cold only stays around a few days. Unlike my sister in Minnesota where the heat wave is in the 20s. Brrr. I’m thankful that’s the high on our coldest day and not warmest.

If you haven’t noticed, our food stays pretty simple around here. In fact, most of what I cook gets served more than once. Right now, it’s what works. It frees up a lot of time for me during the week and is one fewer thing to worry about.

Breakfasts:

  • Green Tropical Smoothies
  • Soaked Oatmeal (cut back the honey)
  • Pancakes from freezer

  • Get the concert series membership drive envelopes printed and ready to be stuffed
