This week could have been titled catch up week! Everything is officially washed and put away from vacation, Christmas decorations are down, the tree has been recycled, and the cars are vacuumed. Now we are settling back into a routine. The baby has had his fair share of cranky days the past week but I’m hoping that since tooth number 3 has broken through we’ll have some happier moments. Until the next 3 decide to come in anyway. The weather was gorgeous Sunday. A trip to the park made my daughter’s weekend.

Other than one meeting, this week should be uneventful. (Here’s hoping that nothing unplanned pops up. A quiet week sounds good to me.) I’m hoping to be able to tackle some projects! (Decluttering is high on the list. It seems like stuff always piles up. Please tell me I’m not the only one that happens to?)

Suppers:

  • Broccoli Cheese Soup x 3
  • Mexican Soup x 2
  • Homemade Baked Egg Rolls (didn’t have these last week)
  • Homemade Frozen Pizza (this is an experiment, never tried making them before!)

Lunches:

  • Salad
  • Mexican Soup
  • Egg Rolls

Breakfasts:

  • Eggs
  • Sweet Potato Hash Browns

Snacks:

  • Fruit: Pomegranates, oranges, pineapple
  • Cucumber and Carrots with hummus

Mediterranean Layer Dip

The second variation in our Friday focus in January of easy layer dips takes a Mediterranean spin. Hummus is one of my favorite snacks and this takes it up a notch with feta cheese, olives, tomatoes, peppers, and onions. One of the great things about dips is that they are easy to adapt to personal taste. Just leave off the ingredient you can’t stand (that would be olives for a few of my siblings).

While eating this, one of my sisters commented, “This stuff is addicting. I can’t stop eating it.”

Refreshing Mediterranean Layer Dip. Feta, olives, and hummus make the perfect combination. Great for parties served with pita chips.

Greek Layer Dip
 
Ingredients
  • 10 ounces hummus (1¼ cups)
  • ¼ feta cheese
  • sliced olives
  • red onion, chopped
  • red bell pepper, chopped
  • cucumbers, chopped
Instructions
  1. Spread the hummus onto a small pie plate or decorative dinner plate.
  2. Top with feta cheese, olives, red onion, bell pepper, cucumbers.
  3. Serve with pita chips.

Goals for 2014

Last year I took some time to brainstorm goals. They were written down here and there but I never compiled them into one place. Mentally I sort if knew what was on the list – pay extra on the mortgage, read more, exercise more, etc but I didn’t remember the specifics or have a way to look them over and remind myself of the end goal throughout the year.

This year I am focusing my goals a little more and putting them all here so I can remember and visualize them.

They might change or adapt as the months pass and that’s okay. As I make adjustments do them throughout the year, though, I want to put thought into the changes and not just lose focus.

My goals for 2014 by Deanna Michaels @ From this Kitchen Table

Read 25 books. I’d love to do more but I’m trying to be realistic. The plan is to make this a goal I can exceed instead of fail at. I’m already having doubts as to whether I’ll finish all of the Jane Austen novels.

Run a 5K. I got to where I was enjoying running this fall. Then it got cold and it became torture. I’m hoping to start back up as the weather gets nicer and it stays light later.

Help our daughter memorize at least 6 verses.

Find an opportunity to serve each month. (Even as simple as the cookie plates we did last year or making a meal for someone)

Have an affordable (or free) date night each month (even at home).

Decrease our mortgage. Pay off 15% of what we have remaining on our mortgage.

Increase our car savings fund by $X. We aren’t in immediate need of a car but want to keep on plugging away on this goal so when it is necessary we have enough.

Try a new business idea. (As I research and get all my ducks in a row, you should hear more on this one.)

Blogging:

  • Develop a subscriber freebie or e-book
  • Increase e-mail subscribers, Facebook likes, and Pinterest followers by at least 2-3 times what they are currently.
  • Get on Google Plus
  • Find a way to consistently use social media
