Ultimate List of Quinoa Recipes

You know how to cook quinoa and where to buy it (affiliate Links: AmazonVitacost, Sam’s Club, health food store).  Now you need to know what to use it in. There is nothing more frustrating than having food taking up space in your pantry and not knowing what to use it in. You end up spending hours searching the internet to find the perfect recipe to try. To save you time I have collected a list of recipes and compiled them here. Hopefully you will find some that sound yummy. I know that I’ll be referring back to this list for my quinoa cooking needs. Quinoa Recipes I have marked which recipes are Gluten Free and Dairy Free for you convenience. Just make sure you use gluten-free oats and dairy free chocolate chips such as these Enjoy Life ones. How to Cook Quinoa

Quinoa is a little seed that packs a powerful punch. The World’s Healthiest Foods talks about the many benefits of this product.

Although you can find quinoa at your local Wal-Mart you will pay more for it. Sam’s Club has it for a great price or you can order it through (affiliate link) AmazonVitacost (this is my referral link – if you sign up through it you will receive $10 off a $30 purchase), or your food co-op. If you have never had quinoa before, you might want to buy a cup or two from the bulk bins in a health food store so you aren’t stuck with something else in your pantry you’ll never use.

How to Cook Quinoa

So, now that you’ve gone out and bought this little seed you might wonder how to cook quinoa. It is very simple and you can have it ready to eat in under 25 minutes. Doesn’t get much better than that. Even though the quinoa you buy has already had most of the saponins removed, there is enough residue left that rinsing the quinoa is very important! Don’t skip or you will end up with a bitter tasting dish. If you don’t have a mesh strainer fine enough, line what you have with cheese cloth. If you are making this as a side dish feel free to add sautéed onions, garlic, and herbs in with the quinoa and liquid.

Quinoa
 
Ingredients
  • 1 C. Quinoa
  • 2 C. liquid (water or broth)
  • optional, ¼ t. salt
Instructions
  1. Rinse quinoa well in a fine mesh strainer.
  2. Place liquid, quinoa, and salt in a pot and bring to a boil.
  3. Cover and reduce heat to a simmer.
  4. Cook for 15 minutes.
  5. Remove from heat and let stand, covered, for 5 minutes.
  6. Fluff with fork.

Greek Wraps or Salad with Tzatziki Sauce

Some meals I just fall in love with the minute they first enter mouth. This recipe is one of those. So many great flavors and fresh ingredients all compliment each other perfectly. Great as a salad or layer in in a pita or tortilla to make a yummy wrap. Works well on the go or for a picnic dinner if you bring the sauce on the side to add before you are going to eat it.

Greek Wraps or Salad with Tzatziki Sauce

Ingredients
For the Chicken:
  • 2 T. Olive Oil
  • 1½ pounds chicken breasts cut into strips
  • 1 t. oregano
  • ½ t. salt
  • freshly ground pepper, to taste
For the Tzatziki:
  • 1 c. plain Greek yogurt
  • ½ c. cucumber, peeled, seeded and finely diced
  • 2 t. lemon juice
  • 1 clove garlic, minced
  • ¼ t. salt
  • freshly ground pepper, to taste
For the Salad:
  • 6 c. romaine, leaf or artisan lettuce torn into bite-sized pieces
  • ¼ c. fresh mint leaves, torn
  • 2 green onions, thinly sliced
  • 1 c. halved grape tomatoes
  • ½ c. cucumber peeled, seeded and thinly sliced
  • ½ c. pitted Kalamata olives, sliced
  • ½ c. crumbled feta
For the Dressing:
  • 2 T. lemon juice
  • ¼ c. olive oil
  • ¼ t. salt
  • freshly ground pepper, to taste
  • 6 tortillas or pita wraps
Instructions
  1. Heat a large skillet over medium heat and add the olive oil. When hot add the chicken and sprinkle it with salt, pepper, and oregano. Saute until cooked through. Cool.
  2. Place all the tzatziki ingredients in a bowl and stir to combine. Refrigerate until ready to serve.
  3. Place all the salad ingredients into individual bowls to allow for personal preference during the salad building or toss everything together in a large bowl.
  4. Combine all the dressing ingredients.
  5. To assemble wraps or salad layer your bowl or tortilla with salad ingredients and top with chicken, dressing and tzatziki sauce.
