Mediterranean Layer Dip

The second variation in our Friday focus in January of easy layer dips takes a Mediterranean spin. Hummus is one of my favorite snacks and this takes it up a notch with feta cheese, olives, tomatoes, peppers, and onions. One of the great things about dips is that they are easy to adapt to personal taste. Just leave off the ingredient you can’t stand (that would be olives for a few of my siblings).

While eating this, one of my sisters commented, “This stuff is addicting. I can’t stop eating it.”

Refreshing Mediterranean Layer Dip. Feta, olives, and hummus make the perfect combination. Great for parties served with pita chips.

Greek Layer Dip
 
Ingredients
  • 10 ounces hummus (1¼ cups)
  • ¼ feta cheese
  • sliced olives
  • red onion, chopped
  • red bell pepper, chopped
  • cucumbers, chopped
Instructions
  1. Spread the hummus onto a small pie plate or decorative dinner plate.
  2. Top with feta cheese, olives, red onion, bell pepper, cucumbers.
  3. Serve with pita chips.

Mexican Layer Dip

I love Mexican food. I also love easy recipes and ones that don’t require any cooking. This recipe is similar to 7 layer dip and makes a perfect party food. My siblings (okay, maybe me too) even enjoy having it for a simple supper.

The layer of sliced avocados is the perfect twist that most people haven’t experienced in a dip before. Make it ahead of time and store in the fridge and you have one less thing to worry about the day of your party.

Easy Mexican Layer Dip. Super yummy and simple put everyone loves it. My siblings eat it for supper.

Mexican Layer Dip
 
Ingredients
  • 1 can refried beans (1½ cups homemade)
  • ½ t. taco seasoning
  • ¼-1/3 sour cream
  • 1 avocado, sliced
  • shredded cheddar cheese
  • diced tomato
  • diced red onion
  • sliced olives, optional
Instructions
  1. Mix beans and taco seasoning together. Adjust with salt and additional seasoning to taste.
  2. Spread in the bottom of a pie pan.
  3. Spread with a layer of sour cream.
  4. Cover with the sliced avocado.
  5. Top with cheese, tomato, red onion, and olives.
  6. Serve with tortilla chips.

5 Ideas for Layer Dips

Recipes for 5 different layer dips with flavors from around the world - Indian, Oriental, Mediterranean, Mexican and Italian. They are soo addicting. Great option for Super Bowl or other gatherings.

You are supposed to bring a dish or appetizer to share, but your week is packed so you need something quick and easy that you can make ahead of time. Or perhaps you are in the mood for a light snacky dinner. It might be that you don’t want to turn the oven on. 

Whatever the reason, layered dips that are excellent chilled or room temperature fit the bill perfectly. They are easy, fun, different, and flavorful.

The five Fridays in January we are going to take a trip around the globe and enjoy layered dips with Mexican, Indian, Mediterranean, Oriental, and Italian twists.

First up will be my favorite way to enjoy a Mexican Layer dip on January 3rd.

Gingerbread Latte

I’ve been barista at a quaint, little drive-thru coffee stand for over a year now, and I can honestly say I enjoy a good, tasty cup of coffee anytime. My favorite part of working at a coffee shop around Christmas, is the delicious, Christmas-y latte flavors. You know the ones I’m talking about, peppermint mocha, gingerbread, pumpkin spice, and eggnog; my mouth is watering just at the thought of them. But on my days off, I don’t want to drive all the way there for just a coffee, so with the encouragement of Dee, I came up with my own latte/coffee recipe that I can make at home! That means I can stay in my warm home, in my pajamas, and drink a warm, tasty latte.

This recipe comes in two parts – the cold brew and then the latte. MAKE SURE to PLAN AHEAD for the cold brew – you need 12-24 hours.

COLD BREW

Ingredients: (may half, double, triple to whatever amount you would like)

  • 3 cups cold water
  • 1 cup coffee grounds (Coarse or medium-coarse)
  • Coffee Filters

Instructions:

Yummy and perfectly spicy gingerbread latte. Perfect thing to get you going on a cold winter morning.

  • Separate the coffee grounds into several coffee filters and tie with rubber bands
  • Set the little coffee bags into a pitcher and pour the water on top.
  • Let the coffee grounds sit in the water on the counter 12-24 HOURS.
  • After 12-24 hours has gone by, remove the coffee bags and throw away.
  • Get a second pitcher with a strainer lined with another coffee filter. Pour the coffee through the filter.
  • Store in the fridge in a sealed jar. Keeps for about 2-2 1/2 weeks.

Gingerbread Latte
 
Ingredients
  • 1⅓ cup cold brew
  • 1 cup milk or half & half (I suggest the half & half or at least a mix of both)
  • ⅛ tsp. ground clove
  • ¼ tsp. ground ginger
  • 1 tsp. cinnamon
  • 1 tsp. vanilla
  • 3½ tbs. brown sugar
  • whipped cream, optional
Instructions
  1. Combine all ingredients in a sauce pan on low heat.
  2. Heat to your desired temperature, stirring occasionally.
  3. (optional) If you like foam, use a whisk to beat mixture until you get a foamy surface.
  4. Ladle out into mug, top with (optional) whipped cream and/or cinnamon.
Notes
Everyone has their own coffee tastes, some stronger and some weaker, so as long as you start with 2⅓ cup of milk/cold brew, you can easily adjust to meet your taste.

Pumpkin Dinner Rolls

Delicious Pumpkin Dinner Rolls. I love these!

These light rolls have a beautiful color to them. They taste fabulous anytime but are especially perfect in the fall. We first found this recipe when I was growing up in a Taste of Home magazine. I hadn’t made them for years, but recently dug out the recipe. Yum. So I made them again the next time we had company. Not only are they tasty they also become a topic of conversation because of the rich color.

This recipes makes 24-30 rolls and can easily be cut in half.

Pumpkin Dinner Rolls
 
Ingredients
  • 1 Tablespoon instant yeast
  • ¾ cup warm milk
  • ⅓ cup butter, melted
  • ⅓ cup sugar (or ¼ cup honey)
  • 1½ cups pureed pumpkin
  • 2 eggs
  • 2 teaspoons salt
  • 5½ - 6 cups flour (hard white whole wheat, white or a combination)
Instructions
  1. In mixer bowl dissolve yeast in warm milk.
  2. Add butter, sweetener, pumpkin, eggs, salt, and 3 cups of flour. Beat with dough hook (or stir vigorously with a wooden spoon if making by hand).
  3. Add in remaining flour to form a soft dough. Knead until smooth.
  4. Let cover bowl and let rise until doubled.
  5. Punch dough down and divide into 24 -30 pieces depending on what size rolls you like.
  6. Form into balls and place on greased baking sheets and rise until doubled. (30-45 minutes.)
  7. Bake at 350 degrees for 10-15 minutes.
  8. Brush with melted butter after removed from the oven.
