9 simple steps on finding joy in stress. I need these right now! Great advice.

It’s been a long 6 months. Stress wouldn’t exactly be the one word I’d select to sum up my year but I’ve felt a lot of it lately.

In the grand scheme of life I know my issues are nothing. In fact, I think I’m ridiculous for even feeling stressed. My family is healthy, we have money to budget with, food to eat, and a great home to live in. My husband has a job with great health insurance and I am blessed with a part time job a block from our house that I can bring the kids to.

What more do I need? Seriously. Why should I struggle and be stressed? Why should I want more or for life to be different?

Life doesn’t always happen how I want or plan. When my dreams or ideas of how things should be differ from the reality, conflict can happen. It’s then easy for me to be unhappy and I find myself getting frustrated and stressed and worried about the future and never ending “what ifs” of life. What a miserable way to live.

When looking at stress or joy, which would I select? Easy choice there. Not that many weeks ago, I had a little perspective change and since then I’ve begun enjoying life and have been okay with where I’m at and what I’m doing – what God has put in front of me right now.

I want joy to be what I feel in our home. To be what my family feels. Joy is not from everything going according to my plans and nothing going wrong, but instead from having my perspective in the right place and letting God do His work.

As I look over the last month 9 steps to finding joy in stress come to mind:

1. Don’t dwell on the negative. When things don’t happen the way you’d like, when your child is disobedient, someone is sick, the car breaks down, the perfect opportunity falls through, you feel like your house is too run down  – don’t dwell on it! Give yourself a moment to vent and then let it go.

2. Give thanks! Keep a running list of all the little and big things you have to be thankful for. It could be something as simple as your child reaching up to grab your hand, the perfectly ripe pear, or that you have carpeting that needs to be vacuumed. Even on the worst of days, there is something we have to be thankful for.

3. Memorize Scripture. This will enable you to replace the negative thoughts with life giving words. It’s easier to not dwell on the negative if we have something to replace those thoughts with.

4. Exercise. Doing something physical, even for just a few minutes, can really help clear your mind and give you energy to face the next task. 10 minutes of pilates, a 20 minute run, or quick power walk pushing the kids in the stroller all can make a difference.

5. See the Big Picture. When life happens, it’s so easy for me to only be able to focus on the circumstance that just happened. It helps to remember what you are doing, why you are doing it – to always remember that God really is in control.

6. Break it Down. Sometimes stress can be caused by a situation, task, or goal seeming impossible. A mountain of debt, large savings goal, parenting struggle, or medical problem is daunting. Finding a new job is a big thing. Break your task (source of stress) down. Try having monthly goals or celebrating every thousand dollars saved. Focus on applying to so many jobs each week. You might even be able to make your daunting task a little fun. Instead of worrying about the uncertainties of the future, get through the next doctors visit or surgery and face one day at a time instead of trying to face all the unknown future at once.

7. Eat Right. Too much sugar (maybe even any sugar) really can affect our mood and behavior as can processed foods. Decrease or cut them out of your diet. Eat lots of fruits and vegetables and plenty of healthy fats. I noticed a big difference in my mood and emotions during our Whole30. During it I became less irritated and stressed.

8. Get Enough Sleep. When I don’t sleep, my ability to handle stress decreases. Everything seems a way bigger deal than it really is. Sneak in a nap. Go to bed 20 minutes earlier. Maybe even give yourself a little grace on your morning wake up time.

9. Have Visual Reminders. Tape quotes and scripture verses to your computer monitor, the bathroom mirror, and above the kitchen stink. Take the word you want to focus on and make it a piece of art to hang on your wall.

A week filled with World Series watching (well, I’ve only watched partial games but my husband is a huge Royals fan so every game has been on), a day trip to the zoo, a concert, and regular life made the last 7 days fly by and left not a lot of time for extra projects.

It was our first zoo trip in over a year – both kids loved it! The 17 month old was entranced and kept pointing and saying “wow”. The aquarium, elephants, and rhinoceros were the highlights. It’s always fun when the animals are active and playing.

Homemade Apple Pie Ice Cream

Oh my goodness! This homemade apple pie ice cream is incredible - all time favorite for our entire family. MUST make. (Plan for extra pie this Thanksgiving!)

Vanilla ice cream and apple pie, also known as my husband’s favorite dessert. Combine the two together and you have perfection. Creamy vanilla ice cream with a touch of cinnamon and real apple pie bites mixed in and you have the perfect fall dessert. Ice cream is the ideal ending to any meal, even as the outdoor temperatures cool down and this recipe proves it.

I have an addiction to homemade ice cream. In fact, my automatic ice cream maker is my favorite kitchen appliance.

After months of thinking about it, we finally experimented and made Homemade Apple Pie Ice Cream. Let me tell you, it should have happened a long time ago. This recipe is a winner. My husband declared the ice cream exceptional and a good friend said it was her favorite ice cream of the many I’ve made so far!

I made this ice cream lightly sweetened because I knew the apple pie was going to be added and we all thought it was perfect. You can make the pie from scratch or purchase one.

Also, if you have an immediate ice cream craving and don’t want to take the time to cook  and cool the ice cream, simply combine all the ingredients (making sure the cream and milk are thoroughly chilled – if you just bought it from the store, it won’t be cold enough) excluding the pie in the blender (or use beaters and a bowl) and combine well and pour into the ice cream maker. (If you don’t like eating raw eggs, you can leave the yolks out.) Freeze according to machine instructions and mix in pie at the end.

Apple Pie Ice Cream
 
Ingredients
  • 2 cups heavy cream
  • 1½ cups whole milk
  • 2 egg yolks
  • ¼ -1/2 cup honey (or ½-1 cup white sugar)
  • dash salt
  • 1 tablespoon arrowroot powder (or cornstarch)
  • ½ teaspoon cinnamon
  • 1 teaspoon vanilla
  • ¼ of an apple pie
Instructions
  1. Put dairy, honey, arrowroot powder, cinnamon and a dash of salt in a pan over low heat. Use a whisk to stir as mixture heats.
  2. Combine egg yolks and honey in a small bowl.
  3. Slowly add ½-1 cup of the of heated cream to the egg yolks (stirring constantly). Then slowly add the egg mixture to the pan of cream, whisking constantly.
  4. Heat the ice cream mixture gently until it thickens slightly. (Don't let it come to a boil.) It will take around 5 minutes.
  5. Remove from heat and add vanilla.
  6. As the ice cream mixture cools, stir it occasionally to keep a skim from forming on the top.
  7. Put ice cream into the refrigerator and chill at least 6 hours.
  8. Put mixture into ice cream maker and freeze according to your ice cream maker instructions.
  9. Chop apple pie into bite sized pieces and stir into the frozen ice cream.
  10. Serve immediately or put in freezer to have a more solid ice cream.
Notes
I used the ¼ cup of honey since the apple pie adds additional sweetness. If you like things sweeter, use the larger amount!

We recently completed our first Whole30. The hardest menu items for me to come up with were for breakfast. Can scrambled eggs work for all the Whole30 breakfast recipes? I think my kids would protest. I’ve never been a huge breakfast person, but I found myself waking up starving every morning so not eating wasn’t an option. I needed food!

Is it nap time yet?

We had an amazing 8 days in Texas with my family celebrating the marriage of one of my sisters. All 8 siblings (and their families) and our parents were together at the same time for the first time in over a year and a half. It was a blast getting to visit, make desserts for the reception, play with my sister’s kids, and spend time with all my family.

We stayed a few extra days after the wedding and got some projects done (including sewing a Christmas stocking for my 17 month old and 2 ring slings I bought fabric for months ago), do a little thrift store shopping, activities with my two kids, and go to a couple of my sisters’ Community Group.

The smartest thing we did on this trip was come home on Thursday so that both of us had off work on Friday! It was amazing to have three days to get unpacked and caught up on things around the house. We even did a little organizing and yard work. There is still more to go, but we made progress. Much better than coming home late on Sunday and having no time to get caught up before heading into the week.

This is the first post Whole30 menu I’ve had to make and I’m looking forward to eating legumes and dairy again. 🙂

  • Write 2 more posts
  • Exercise!!! (This didn’t happen at all when we were on vacation)
  • Review Bible verses and start a new one
  • Read a couple more chapters in (aff link) When Helping Hurts: How to Alleviate Poverty Without Hurting the Poor . . . and Yourself (again, didn’t do any reading on vacation)
  • Go to the PO Box before the first community concert of the season and do a deposit record after the concert. (An amazing 14 year old classical pianist!)
