We spent the early part of this week enjoy weather near 80! Perfect for a power walk and a couple of strolls letting the kids wander down the sidewalk. The cold has come back though and it feels like winter once again. (Especially with the nasty wind. Oklahoma winters would be a lot more pleasant without it.)
Saturday we took a little trip to Chick Fil A and the kids played for hours and we enjoyed free food using our calender cards. Win win!
This week our daughter is turning 4! Hard to believe it. It doesn’t seem like that long ago she was a little newborn and now she’s full of personality and spunk and is always saying something memorable.

This is one of the first recipes I put up on the blog and I still love how easy and healthy they are. They also happen to be the third most popular recipe! (Coming in after this easy Alfredo Sauce and fabulous Sweet Potato Breakfast Casserole.)
These Oat Flour Banana Muffins (that are dairy and wheat free) make the perfect breakfast, snack, and freezer food. That means you can make a double or triple batch and enjoy the wonderful smells wafting through your kitchen one day and stock your freezer for the next few weeks at the same time.
Guess what else? There’s no added sugar. That’s right, not even honey, maple syrup, or stevia. Using ripe bananas adds the perfect sweetness. That makes me happy as I try to keep breakfasts with sugar to special occasions.
All that to say, if your family is used to sweet muffins, you might want to use the chocolate chips or add a little honey (or even sugar) the first time you make them and each time you make them use less. We all eat and enjoy them just as they are though.
Mini muffins work best in our house. They are the perfect size for a 4 year old and a 20 month old. Less waste if they decide they aren’t hungry anymore after one bite, if you know what I mean. Of course you can make this recipe into bread or regular muffins as well.
Watch the cooking time closely the first time you make these – we all fill our muffins tins to different levels, oven temperatures vary, and pans cook differently.
Depending on how full you fill your pans this recipe will make 36-48 mini muffins. Last time I made it we got 12 mini muffins and 11 regular sized ones out of a batch.

Another week of gorgeous weather! We played at the park, went on walks, and enjoyed every minute of it. The cold will be returning this week. Saturday, we had an impromptu visit from my husband’s parents and nephew. They came the afternoon and evening and the kids enjoyed playing and we visited and ate some yummy Italian food from a local restaurant.
I’m hoping this week will involve my 20 month old sleeping better. I think he’s started working on his molars and nights have been brutal. They have to come in eventually, right?
Popcorn is a popular snack in our house. It’s easy and pretty healthy – especially if you use the Whirley-Pop we love so much. Most of the time it’s of the butter and salt variety popped on the stove. Sometimes I’m in the mood for a salty and sweet snack though and then kettle corn is the answer.
We recently did some experimenting and found adding cinnamon to the mix brings it over the top. Cinnamon Kettle Corn is the perfect movie night food or afternoon snack.
In my opinion, cooking is all about making things fit the tastes of your family. If you are trying to cut back on sugar, eliminate a tablespoon or two. Love salt? Add some more. My husband loved the popcorn with 3/4 teaspoon of cinnamon. Me, I like it with 1. But anyway you make it, it’s some good (and addicting) stuff!
Once, I attempted to make this healthier by using sucanat. Umm, let’s just say everything had to be tossed. I think the higher moisture content caused it to burn. I use the fair trade cane sugar with no problems though.
You can find your popcorn kernels anyplace from Wal-Mart and sometimes Aldi to online at Amazon and Vitacost (<— If you sign up using my referral link, you’ll receive $10 off your first order if it’s $30 or more.)
Put oil and 3 popcorn kernels in your popper. Turn heat to medium (or a smidge over).
Combing sugar and cinnamon.
Once all 3 kernels pop, add remaining popcorn and the sugar and cinnamon mixture. Give the pan a stir/shake. Then take a silicone scraper and stir and scrape the bottom and sides of the pan quickly. (It helps break up and dissolve the sugar.)
Close lid and use the handle to stir if you are using a Whirley-Pop or shake the pot every couple seconds.
When finished popping, pour into a big bowl and sprinkle with salt.
