Spaghetti Squash Chow Mein Recipe

I’ve had some spaghetti squash flops over the years, but this recipe is not one of them. In fact, I eagerly await squash season so I can make it again each year.

My girls (2 and 7) eat seconds of this and even my (not a fan of squash) husband gives this a thumbs up. I suppose it doesn’t hurt that one of his favorite meals is the regular kind of chow mein.

This dish is loaded with veggies. If you want it to be vegetarian, leave off the chicken. For the omnivores out there, the chicken adds a tasty touch.

A lot of spaghetti squash recipes don’t hold up well as leftovers, but we enjoy this one the next day just as well. I’m all about cooking once and eating at least twice!

This recipe, as written, fed my family of 5 twice, so I’d say it would serve 6-8 as adult portions. I bought 3 spaghetti squashes that totaled 6 pounds.

The method of cooking spaghetti squash that’s in this recipe is my go to. It always turns out fabulous and once I cut the squash in half, it’s super simple.

Spaghetti Squash Chow Mein

Spaghetti Squash Chow Mein
Serves: 6-8 servings
 
Ingredients
  • 6 pounds spaghetti squash
  • 6 stalks of celery, thinly sliced (around 3 cups)
  • 4 carrots, peeled and grated (around 2 cups)
  • 2-3 cups shredded cabbage
  • 1 onion, diced
  • 4 cloves garlic
  • 1 teaspoon minced fresh ginger
  • ¼ cup soy sauce, coconut aminos etc
  • 1-2 cups diced, cooked chicken (optional)
  • Oil
  • Salt and Pepper
Instructions
  1. Cut spaghetti squash in half and scrape out the seeds and stringy insides. Drizzle lightly with olive oil and sprinkle with salt and pepper. Place cut side down on a baking sheet and bake at 350 degrees for 45 minutes. Remove from oven and let cool until you can handle them. Use a fork to scrape across the squash short ways to make "noodles".
  2. In a large skillet heat a tablespoon of oil and saute the onions 3-5 minutes. Add the garlic and ginger and continue to cook a few more minutes.
  3. Add the carrots and celery to the skillet. Stir and cook a few minutes.
  4. Add the cabbage and cook until all the vegetables are tender.
  5. Add the spaghetti squash to the skillet and combine.
  6. Drizzle ¼ cup of soy sauce (or alternative) over the mixture.
  7. Season with salt and pepper and additional soy sauce to taste.

Easy DIY Gift for Pastors

Gift for Pastors: Chex it Out!

This pastor appreciation gift idea consists of a snack, a play on words, and a thoughtful note.

My husband considers himself a Chex Mix expert. He’s all about the homemade stuff (and thinks I need to share his recipe and tips with you because he’s confident it is the best). So of course I have to recommend you make up a batch of your favorite Chex recipe and package it up.

If you are short on time, though, buying the bags of Chex Mix honestly works just as well.

Print a sheet of the We Have the Best Mix of Pastors Around cards and put a hole punch in one corner. After you write a sentence or two about why you appreciate each pastor and sign your name, attach the card to the Chex Mix with ribbon.

Then all that is left is to make the delivery. I really love that this idea is simple enough to do on even the craziest of weeks and for multiple pastors. You can get this done and your kids can even help.

Wrapping the Experience Gift:

If you are worried about how this idea will work not having a gift under the tree or at a birthday dinner for them to open, there are a couple of easy options.

  1. Make up a certificate/letter with all of the details (use pictures for younger kids) and print in color. Place that in a box or gift bag and wrap like you would a present.
  2. Come up with a small gift that goes along with your experience gift and wrap it along with a note. Or wrap the small gift and note separately, having them open the physical gift first.

The Best Homemade Fluffy Pancakes

Mmmmm. Light, airy, hot off the griddle. This is the best homemade fluffy pancakes recipe out there.

Many a Saturday morning growing up, my dad would pull out the big giant green Tupperware bowl and mix up a humongous batch of pancakes. We ate dozens of these things each week. I can remember him even feeding numerous neighbor kids.

Now that I have kids of my own, pancakes or waffles are a typical Saturday lunch.

(I have an apple whole wheat pancake recipe right here for another fun option.)

Maple syrup is our go to topping but fruit and/or butter would also be delicious.

There are two things that help make these pancakes extra fluffy.

Let’s start with the buttermilk.

Buttermilk makes amazing pancakes (and rolls – I’ll have to share that recipe soon). If you don’t have buttermilk, you can do the trick of adding a little vinegar to the milk and letting it sit a few minutes.

*Decrease the amount of milk mixture by 1-2 tablespoons if not using real buttermilk.*

You can also use almond milk and vinegar for a dairy free substitute.

The egg whites.

This is the second secret. Separate your eggs and beat the egg whites until they are stiff. The final step before cooking your pancakes will be to fold the egg white mixture into your batter. I love using a silicone spatula for this. Mine are from The Pampered Chef, but these ones on Amazon seem to have good reviews too!

You guys, this is so good! You might dirty an additional bowl but it’s worth it.

This recipe also calls for an optional extra – a little bit of cinnamon. Give it a try!

Freezing Instructions:

I love to whip up a giant batch of these homemade fluffy pancakes and put the leftovers in the freezer. Be sure and freeze them in a single layer and after the pancakes are frozen transfer them to a zipped freezer bag.

To eat, pull one out of the freezer and put it in the toaster for the perfect, easy weekday breakfast.

P.S. We even make these into whole wheat pancakes! Freshly ground soft white wheat is the best for that.

Homemade Fluffy Pancakes

Homemade Fluffy Pancakes
Serves: 6-7 pancakes
 
Ingredients
  • 1 egg
  • 1 cup buttermilk (see notes for substitute)
  • 2 T oil (or melted butter)
  • 1 C flour
  • 1 T sugar
  • 1 t. baking powder
  • ½ t soda
  • ½ t salt
  • 1 t. vanilla
  • opt.dash or two of cinnamon
Instructions
  1. Combine flour, sugar, baking powder, baking soda, salt, and optional dash of cinnamon in a mixing bowl.
  2. Separate the egg.
  3. In a small bowl, combine the egg yolk, oil, vanilla, and milk.
  4. Pour over the dry ingredients and mix with a fork until lumps are gone.
  5. In another bowl beat the egg white until stiff.
  6. Gently fold the egg whites into the pancake batter with a silicone spatula.
  7. Heat a skillet over medium heat.
  8. Put a ⅓ of a cup of batter onto a hot skillet and cook until golden. (Watch for small bubbles to come up and the edges to look a little more firm.) Flip and cook the other side.
  9. Serve with toppings of choice.
Notes
Buttermilk Substitute: use regular milk or almond milk, decreasing amount by 2 tablespoons. Add a scant tablespoon of vinegar or lemon juice and let stand for 5 minutes.

It’s my favorite time of year! I love all things autumn, including thinking about an exhaustive list of fun (and easy) fall activities for kids – AKA a fall bucket list!

Fall to me means cool evenings and mornings along with the perfect daytime temperatures. It’s when I can make soups frequently and baking calls my name. The trees paint beautiful pictures. All things pumpkin are celebrated.

It just makes me excited.

Autumn is also the perfect time of year to purposefully have a little fun and make memories with your children using a fall bucket list.

Isn’t it easy to get caught up in to-do lists and the chaos of life? Having a list and plan can help me slow down and enjoy life and my kids more.

They don’t even have to be big, expensive things on your list. Take the time to appreciate and get in the moment of even the little things. Your kids will love you for it.

If you are overwhelmed at the thought of just one more thing, pick just 4 and do one a week. See if you can turn something you have to do anyway (being in the kitchen) into a fall theme.
